Goulash with Turkey and Zucchini
The Dish
Goulash is a thick and chunky stew loaded with vegetables, meat, and pasta. Our wholesome goulash is made using lean ground turkey, whole wheat pasta noodles, and oodles of vegetables. We chose zucchini, yellow squash, bell peppers, green beans, and onions to give this stew a summery feel, using the best ingredients of the season. This recipe is an excellent prep-ahead option for an easy reheat.
Prepping Ahead/Time-Saving Tips
To save on time, or as a meal prep ahead option, feel free to create the stew — by sauteing the turkey and veggies, and cooling — then refrigerate until ready to enjoy. The goulash will keep in the refrigerator for a couple of days. Cooking your pasta noodles ahead of time (cooling and refrigerating) is also a big time saver.

Ingredients
- pan release spray
- 3 oz. lean ground turkey
- 1 tsp. garlic peeled and minced
- 2 Tbsp. red onion peeled and diced
- ½ cup zucchini diced
- ½ cup yellow squash diced
- ¼ cup green beans
- ¼ cup green bell peppers diced
- 1 tsp. italian seasoning
- ½ cup canned diced tomatoes
- ¼ cup low sodium vegetable broth
- 1 cup whole wheat penne cooked according to the instructions on the package
- 1 Tbsp. scallions chopped
Getting it done:

Step 1
Moderately spritz a medium saucepan with pan release spray and heat over medium.

Add the garlic, red onion, zucchini, yellow squash, green beans, and green bell peppers to the saucepan and sauté for 2-3 minutes, or until tender-crisp and fragrant.

Crumble the ground turkey into the saucepan, season with Italian seasoning, stir to combine with the veggies, and continue to cook for 2-3 minutes, or until the ground turkey has browned and is cooked through.

Add the diced tomatoes and broth, stir to combine with the turkey and veggies, and bring to a simmer. Simmer for 10 minutes, stirring occasionally.

Add the cooked penne pasta to the saucepan and stir to combine with the sauce.

Spoon the goulash into a serving bowl and garnish with chopped scallions before serving.
