Basil Chicken with Peach, Cucumber, and Tomato Salad

A deliciously marinated and grilled chicken breast is topped with a seasonal salad of fresh fruit and veggies. Both the grilled chicken breast and the salad are heartily seasoned with fresh basil, balsamic vinegar, and garlic. Peaches add a lovely balance to the salad, with pops of seasonal sweetness that pair perfectly with crispy cucumbers and vine-ripe tomatoes. This is a quick, nutritious meal with plenty of prep-ahead options to save on overall time, perfect for busy weekday nights.
Prepping Ahead/Time-Saving Tips
To save on time or as a meal prep option, feel free to marinate the chicken overnight. You could also marinate, grill, chill, and reheat the chicken breast for even more time savings. We don’t recommend making the salad ahead of time, as the vinegar can cause the fruit and veggies to get a bit soggy.

Ingredients

- 4 oz. boneless skinless chicken breast
- 1 tsp. garlic peeled, minced, and divided
- 2 tsp. balsamic vinegar
- ½ cup frozen peaches, thawed and diced
- ½ cup cucumber diced
- ½ cup tomatoes diced
- 2 tsp. balsamic vinegar
- ½ tsp. olive oil
- 3 tsp. basil chopped and divided
Getting it done:

Step 1
Preheat a gas grill to medium-high heat or prep charcoals for a charcoal grill.

Pat chicken breast dry with paper towels, place on a plate, and lightly season with a pinch of salt and pepper.

Sprinkle the chicken breast with 1/2 tsp (1.5g) of minced garlic, sprinkle with 1 tsp (1g) fresh basil, and drizzle with 2 tsp (10ml) balsamic. Set the chicken aside to marinate for 10 minutes while the grill preheats.

Once the grill is hot, add the chicken and cook for 2-3 minutes per side, or until lightly charred and cooked through. Remove from the grill and set aside to rest.

Place peaches, cucumbers, and tomatoes in a medium bowl. Add balsamic (2 tsp. or 10ml), olive oil, remaining garlic (½ tsp or 1.5g), and a small pinch of salt and pepper. Stir to combine.
