Mediterranean-Inspired Side Salad
The Dish
Round out your lunch or dinner entrees with the addition of this very veggie side salad. Fresh spinach, cherry tomatoes, cucumbers, bell peppers, and red onions are drizzled with a simple dressing of balsamic vinegar and olive oil. The salad is then seasoned with a little pinch of dried oregano and grated parmesan, giving this salad the Italian trattoria treatment.

If you need to boost your veggie quota for the day, feel free to add in any additional ingredients to this salad. Roasted or raw mushrooms, broccoli, carrots, zucchini, etc… are all lovely additions.

Ingredients
- 2 cup spinach
- ¼ cup cherry tomato | halved
- ¼ cup cucumber | chopped
- ¼ cup red bell pepper | diced
- 1 Tbsp. red onion | peeled and sliced
- 2 tsp. balsamic
- 1 ½ tsp. olive oil
- ¼ tsp. dried oregano
- 2 tsp. parmesan grated
Getting it done:

Step 1
Place spinach in a serving bowl or plate and top with cherry tomatoes, cucumbers, red bell peppers, and red onion.

Drizzle the salad with balsamic vinegar and olive oil, and season with oregano. You can also add a little pinch of black pepper, if desired.

Serve the salad with a light sprinkling of grated parmesan.
